The lavaret is a typical fish from pre-alpine lakes with a silver hue and very delicate white meat. Fillets from this fish are generous and can be used in haute cuisine. Their exquisite flavour is best brought out by flash-frying them, just to give them colour. A typical habit of Lake Maggiore is to serve them after a risotto prepared with fish broth.
